No Bake S'Mores Cheesecake

Okay, so maybe not completely no bake, but it's pretty darn close! You have to bake the crust for 10 minutes, but hey, while the crust is baking you can whip up the filling. This is what you'll need:

Whoops, forgot the butter.

I created this recipe because M got me a culinary torch for Christmas and I have been desperate to light things on fire use it ever since! And it is AWESOME! If you don't have a culinary torch, use real marshmallows instead of marshmallow fluff and toast them in the oven for a few minutes until they're a little brown and crispy and delicious. Or just buy a culinary torch because they're really not expensive and it is SO FUN to light things on fire.

I have to say, I'm pretty proud of this dessert. The toffee gives the crust an amazing saltiness, and there are few things that beat roasted marshmallows. The husband was pretty impressed & said it belongs in a restaurant. I'll take it!

Not-So-Secret Recipe

Dump your graham cracker crumbs into a bowl. Put your toffee into a plastic baggie and beat the hell out of it with a meat tenderizer thingy. Or just buy crumbled toffee. But it's not nearly as fun. Your choice.

Add your toffee, melted butter, and sugar (I used splenda blend*) and stir until combined.

 Put a quarter of the mixture into each ramekin and press down to form your crust. Bake at 350 degrees for 10 minutes.

While the crust is baking, mix the sugar and softened cream cheese until there's no child sugar crystals left behind. Once smooth, add your vanilla extract and cocoa powder. Stir, stir, stir.

Try really really hard not to eat it at this stage. The end product is totally worth it.

Fold in your Cool Whip until there are no white streaks running through the batter.

 
Oooh, pretty. Put your Cool Whip away so it doesn't melt...

...but make sure you grab the correct lid. Because you are not an idiot. Yes, this happened.


Once again, divide your batter up into quarters and put an equal amount into each ramekin.


Smooooth it out and dust a little cocoa powder on top, cause you is fancy.


Put your marshmallow fluff into a pastry bag... or ziploc, if you want to be ghetto fab like moi. Avoid getting mauled by the little white dog eyeing your goods.

Pipe a cute little white poop onto your cheesecake. If your poop isn't cute enough, no worries, you're about to light it on fire anyway (heh). I am mature beyond my years, I know.

Now burn the mother effer down. Sidenote: I get this trait from my dad. He once had the fire truck come to our house, sirens blaring and all, because he was lighting a pile of straw on fire in our back yard. Which is illegal. The neighbors thought our house was burning down. Twas awesome.

Mmmm, crispity, crunchity, gooey marshmallow . I will admit, it's fantastic just like this, but leave it in the fridge overnight and it's even better once it sets up a little bit.

Obviously I ate one immediately. And then I ate one the next day. In the name of culinary science, of course.

It's Spring, It's Spring!

Okay, so it's pretty much been spring in Florida for a month already, but according the the calendar, it is finally officially spring everywhere else! Yay! Spring is my absolute favorite season. Here in Florida, however, spring lasts all of maybe 2 months (if we're lucky) and then it just transitions right into sweltering, humid, balls hot summer. Such is life.

This year, I'm determined to actually look put together for spring/summer. Usually it's just so god awful hot that all I care to do is throw on a pair of pants, a tank top, and some flip flops. It's lazy girl fashion. But no more! Here are a few items I'm lusting over and getting inspired by for the warmer weather:

Colored Jeans
I've got a pair of red jeans that are pretty seasonless, but I am dying to add a pair of undeniably springy soft coral and mint colored jeans to my collection.

Neon
Not going to lie- I've been pretty resistant to jump on the neon bandwagon. I've seen so many cheap looking neon accessories lately that it just... no. But a flowing neon dress? Yes. Yes. Yes.


Lace Minis
I'm not really a shorts kind of girl, but a lace mini skirt I can totally get behind. Pretty, delicate, and so fun and unexpected in a bright color!

Chic Beach Cover Ups

Throwing a tank top over a bikini isn't happing anymore. My beach style needs to be kicked up a notch or five. The one on the left is $19 at Forever 21?! Run, don't walk.

Chambray
I heart chambray. You can basically pair it with anything and it looks awesome, but I am especially loving it paired with something bright on bottom!

Printed Maxi Dresses
I'm not one for delicate little patterns, so I am loving these big bold prints on a big panel of fabric. Girlfriend is working that red & white chevron dress. Need.

1. We got to go on a lunch date together. We should do that more often.

2. You help me stay motivated to work out & eat better.

3. Speaking of exercise- you work out to my 80s station on Pandora. That's about the only music genre we have in common!

4. I got a new laundry basket for my clothes so we can have separate baskets. When you saw it you whined that my laundry basket is "cooler" that your laundry basket. I love that you're such a man, but sometimes you can be such a little boy. It's adorable.

5. I'm usually the one who does gross mommy duties for the dogs- cleaning up puke, trimming bum fur, cleaning out their ears, etc. But the other night I woke up to the sound of water in the middle of the night and you were giving Spade a bath because he had a little accident. You said it made you feel like a good daddy. I love you.

I often dream of having a loungey room that is just painfully British. Not too kitschy, no red phone booths, but Union Jacks spashed everywhere! Then I come back down to reality, remember that I absolutely cannot look at the color red everyday and keep my fantasy lounge exactly where it belongs- in my brain. Well, and on my blog.

MIA

Holy hell! I haven't blogged in a month. I think that's some sort of personal record. To be honest, I feel like a bit of a fail blogger because my life just hasn't been all fun and excitement lately. I've even been MIA on Twitter! Not cool.
