Restaurant Remix: Village Inn Ultimate Skillet

On the weekends, Mike and I have pretty much made it a ritual to go to Village Inn for breatfast. It's a small chain with impossibly tacky buildings, hideous ceilings, but really really good breakfast. Like most people, we generally don't have time to eat a proper breakfast during the week, so it's nice to get real "breakfast food" every now and then.

Every time we go, we almost always order The Ultimate Skillet. It's basically a simple skillet of potatoes, veggies, and ham, and it is delicious. So, of course, like any other stand-out dish, I had to try to recreate it at home. I have to say this recipe turned out spot on, the only thing missing is the actual skillet!

First, gather your ingredients.

Peel and chop your potatoes into 1 inch cubes. Place into a pot of water and bring to a boil until fork tender- about 10 minutes.

While the potatoes are boiling, chop your mushrooms, onion, and green pepper. Set aside.

Drain potatoes and set in a paper towel lined bowl to get out excess water.

Once your potatoes are fairly dry, brown in a skillet with 1 tbsp butter and 1 tbsp canola oil. Salt and pepper to taste. Set aside.

In the same skillet, add an additional 1 tbsp each of butter and canola oil. Saute your veggies until onions are translucent and peppers are slightly softened, about 7 minutes.

Once your vegetables are finished, add browned potatoes and ham and toss. Careful not to break up your potatoes too much. Salt and pepper to taste.

Then just top with a sprinkle of cheese and some diced avocado and enjoy!

This dish is also great with a fried egg with runny yolk, a dollop of sour cream, or even a bit of ketchup on top. Try it!

awesome. I always wondered how to get potatoes cooked yet crispy on some sides. I kept baking them and it didn't work. I'm going to try this sometime. Thanks!
