Here in Florida, it's mid-September and we're still flirting with the 100 degree mark. Summer in Florida is basically 7 months of the year. We start getting fall weather around late October, and then by late March, it's crazy hot again. Needless to say, I am SO sick of this heat. Opening your front door feels like walking right into a sauna- hot and sticky.
So what's a girl to do? Well, this particular girl tried to coax glorious fall into coming a little early by making a very autumnal apple crumble. I'm still holding out hope that we'll get some nice dips in temperature soon. Fingers crossed!
Anywho, whether you're trying to conjure up some come hither autumn voodoo, or enjoying the turning of the leaves, I think you'll enjoy this recipe, lovingly called my "Sick of Summer Apple Crumble."
Preheat your oven to 375 degrees and gather and wash your apples. There are 6 here, but I only used 5. I used different kinds of apples because that's what I had on hand, but you can use any good baking apple. I think I used one Gala, one Fuji, one Golden Delicious, and two Granny Smiths.
Peel, core, and chop your apples into approximately 1 inch chunks. I like to use my handy dandy apple slicer/corer, and then just chop them from there. After they're chopped, fill a bown with a few inches of water and the lemon juice and toss your apple chunks in so they don't brown.Drain the apples, toss in the walnuts and raisins, and arrange in a baking dish (I used a glass 8x12 pyrex). Sprinkle the sugar and cinnamon over top.
Of course, I forgot to take pictures when I was making the crust mixture, but it's pretty simple- dump all the crust ingredients into a bowl, and smush it around until it resembles... well, something doughy. Then, just pinch off pieces of dough and plop them right on top of the apple mixture.
Bake for 30 minutes in a 375 degree oven and simple as that, you have yourself a delicious cold weather (or cold weather wannabe) dessert!
I added a little fresh whipped cream and a sprinkle of cinnamon and devoured. And then repeated. About three times.
